Homemade Braised Pork

Ingredients

Cut the pork belly into chunks, preferably with skin on.

Prepare the ingredients. If you don't have enough scallions, you can use three scallion bulbs. Garlic is optional, but the braised garlic tastes quite good.

Prepare the light soy sauce and cooking wine.

Blanch the pork belly and let it dry. Drying is important to avoid oil splatter when frying.

Caramelize the sugar: Use a cold pan with cold oil, add rock sugar.

When the sugar starts to crack, stir continuously and reduce to low heat.

Keep stirring until the sugar is fully melted and turns caramel-colored.

Add the pork belly and stir-fry.

After the pork is well-colored, add scallions, ginger, garlic, and star anise. Continue stir-frying.

Add cooking wine and light soy sauce, stir-fry.

Fry until the fat renders out. The color is so tempting!

Pour in a large bowl of warm water, cover, and bring to a boil. Then reduce to low heat and simmer for 45 minutes. Finally, turn up the heat to reduce the sauce.

Cooking Tips

For salt, adjust according to your taste. My family prefers a lighter taste, so the light soy sauce is enough. Those who prefer a stronger taste can add salt.
