Mapo Tofu

Spicy, numb, tender, and crispy - none can be missed. You can also refer to my salted fish eggplant recipe to make Mapo Eggplant.

The seasoning pack is essential and can be easily bought on Taobao.

Cut the tofu into cubes and prepare a pot of boiling water.

Add about 8g of salt.

Add boiling water to cover the tofu and blanch for about 5 minutes.

Heat oil in a pan over medium-low heat, add the seasoning pack and chili powder, and stir-fry until fragrant.

Turn to high heat, add minced beef, and stir-fry.

After the beef is cooked, drain the tofu and add it to the pan. Add a little light soy sauce and stir-fry a few more times.

Add an appropriate amount of boiling water and bring to a boil over high heat.

Add sugar, then prepare the water starch.

Mix the water starch well.

After boiling for about 2 minutes, taste and adjust the seasoning. If it's a bit bland, add some salt, then thicken with the water starch.

Shake the pan a few times, add Sichuan pepper oil before serving. If you like, add green garlic, but I didn't prepare any today.

Cooking Tips
