Keto Quick Coffee Cake
I’m the kind of person who likes to solve everything with one bowl and one spatula. Separating egg whites and yolks is a bit too much hassle for me.
Ingredients
Butter50 g
Egg1
Heavy cream20 g
Erythritol (70% sweetness)40 g
Instant coffee powder5 g
Almond flour60 g
Coconut flour5 g
Baking powder2 g

Melt the butter in the microwave for 1 minute.

Add the sweetener, egg, and heavy cream, then stir to combine.

Add all the dry ingredients. For the coffee, I used two servings of Sandunban (instant coffee concentrate).

Grease the mold, pour in the batter, and decorate the surface with whatever you like. I used walnuts and grated cheese.

Bake with convection at 165 b0C for 25 minutes.
